Scraps and Snippets ~ Vegan Thai Coleslaw
Thai Coleslaw
1 16 ounce bag of coleslaw shreds (this is about 5 handfuls if you like to shred your own cabbage)
½ Red pepper thinly sliced and chopped into 2 -3 inch pieces. (So slice pepper lengthwise then chop in half.)
2-3 TBSP finely chopped fresh cilantro
3-4 (use all of it, not just the green part) green onions/scallions, chopped
1 tsp lime zest
1 TBSP lime juice
1 TBSP rice wine vinegar
⅓ Cup Vegan mayo
¼ Cup peanut butter
1 Cup coconut milk (I used canned full fat without chilling)
1 teaspoon garlic powder
1 teaspoon salt
1-2 teaspoons of red pepper flakes (use to taste, I used 2 and it was a nice burn)
Optional:
1 Cup peanuts
1 Cup chopped meatless chicken if desired
Prep, rinse, chop all your veggies.
In a large bowl pour in coconut milk, add peanut butter and mayo and stir until combined. Add salt, garlic powder, pepper flakes, lime juice, vinegar and lime zest. Finally stir in all the vegetables and add-ins and mix until coated.

Scribbles and Scrambles ~ Fruitastical
In year four of our raspberry harvest we have hit fantastic yields. Especially since we didn't prune them as we should have. Last week we began pulling about a cup a day. The past two days we've netted about six cups a day We have twice as many raspberries in various stages of maturity and I'm guessing we've got at least another full week or two. Our roughly $50.00 investment and few punctures and pokes are paying dividends. The blueberries. Not quite as happy. But I'm a big fan of the raspberries.

Scribbles and Scrambles ~ Sound of Silence
Weird. I am alone. Why in the world is this blog-worthy? Good question It's probably because I have NOT been alone in my house for weeks. We've had guests and they have been oh so welcomed and oh so much fun. But the guests include children and children and dogs equals noise. Lots of noise. Right now I'm processing how quiet my house is going to be when they are gone. It makes me a little sad. The dogs are sawing logs and unaware of coming changes in their lives again. But I suppose that's the nature of their lives... change. They weren't adopted into a low key household where normal is actually...er...normal.
I have some instruments that will be glad of home alone time. And a blog. And, er, a thousand household crevices.
For now I'm enjoying the silence.
