Change. I've learned to embrace it, ride it out til the end. Sometimes I'm kicking and screaming, other times weeping with my eyes clinched tight. Once in awhile I ride like a dog in a car, head out the window snorting what life has to offer. Mother to young adult children, a marriage of thirty years, and a desert to mountain to valley waltz with God have shaped me into someone I never imagined I'd be. Life is short and I want to live it. Tears, sighs, laughter and change. Every morsel granted to me. Scrambled, shaken or stirred.

Scraps and Snippets ~ Lemon Chia Bars (Vegan)



Lemon Bars

8 x 11 30 to 35 minutes 350

1 1/2 Cup whole wheat pastry flour
1 1/2 tsp baking powder
1/2 tsp salt
3 flax eggs (4 TBSP water, 2 TBSP milk)
1 Cup sugar
2 TBSP EB
1 tsp vanilla
1/2 tsp almond extract
1/3 Cup lemon juice
1 tsp lemon juice
1/2 Cup coconut oil
Zest of one lemon
1 TBSP chia seed


Glaze 
1 Cup powdered sugar
2 TBSP milk
1 teaspoon lemon juice
two drops almond extract

additional chia seeds, 1 tsp or so.

Bake 30 minutes, or until set up. Pour glaze over bars and let cool.
